First off, brown rice sushi! I got some yummy salmon from home during our visit to San Diego, so I made nigiri as well as rolls. In an attempt to be even healthier, and because I love brown rice, I used brown rice for the first time for sushi. The rolls aren't the prettiest, but they sure tasted delicious with avocado, cucumber, and shiso leaves to go with the yummy salmon! Jeremy was delighted also- gotta love a husband that can appreciate good Japanese food.
The second featured item was today's experiment at two kinds of rolled breads. One was an almost pizza-like bread even though I was originally inspired by the eggplant brioche rotolo appetizer that was served at our wedding. I didn't actually get to eat it at our wedding since we
were taking pictures, but I had it at the tasting! Anyway, this wasn't quite like that as I made with a regular white bread, not brioche, but still delicious! Jeremy loves pizza, so he liked this bread a lot. Almost like a calzone, but with fluffier bread and no cheese- soooo gooooood (if I say so myself). Next time, I'll try it with cheese and add more filling. The possibilities that have opened up...
Bread roll #2 was a request made by my co-worker quite a bit ago:
cinnamon swirl bread, which he eats almost every day for breakfast. I needed some time to work on this one since it's not just an easy bake in the bread machine. I'm happy to say that both breads came out really well. We even slathered on a little Nutella and ooooohhhh even better...
Overall, I'm having fun experimenting and when I have the time to cook, I will give it a whirl! Weekdays are tough after long days at work, but there are still good eats in the Nesbitt home!
